Rolled Shoulder Of Lamb With Date, Pine Nut And Rosemary Stuffing

Treat the family this Christmas with this delicious recipe from the Celebration Homes kitchen.

Rolled Shoulder Of Lamb With Date, Pine Nut And Rosemary Stuffing

Serves: 6

  Ingredients  
  • 1.5kg Lamb shoulder (Ask your butcher to remove bones)
  • 1 brown onion - Finely diced
  • 1 garlic head
  • 250g pitted dates
  • 4 sticks fresh Rosemary
  • 250g Pinenuts
  • Extra Virgin Olive Oil
  • Butchers twine (Ask your butcher when buying Lamb)
  Method  
 
  1. Preheat oven to 180C. Finely dice onion, three cloves of garlic and place in a pan on a very low heat with olive oil to allow to sweat.
  2. Chop dates and add to onions till they soften and break down, then set aside.
  3. Lightly toast pine nuts in a clean pan for 15 seconds, then remove and combine with date and onion mixture.
  4. Lay deboned lamb shoulder on a clean chopping board skin side down. Serve pinenut mixture onto lamb two inches from edge, lay Rosemary stick on top.
  5. Roll Lamb over itself, tie with the butchers twine 3cm from end. Repeat four times at 3cm intervals so Lamb is compact.
  6. Prick Lamb with a knife making 2cm deep incisions all over and place a clove of garlic and rosemary in each incision.
  7. Brown lamb on all sides in a frypan or metal baking dish in which you will bake it in. (One minute each side on a medium heat).
  8. Place in oven for 135 minutes, remove and cover with foil and rest meat for 20 minutes.
